Sunchokes

Also known as Jerusalem artichokes, these tubers from the Sunflower family are a fiberous native with a sweet, nutty flavor. When cooked they become more starchy, similar to a potato. They can be enjoyed roasted, raw, or even pickled. |

Green Kohlrabi
From Gray Farms in Watseka, IL
Kohlrabi is crunchy with a delicate pepper zing similar to turnips, yet also mild and slightly sweet like cabbage. They can be enjoyed raw with hummus, roasted, sautéed, or made into a slaw. |

Back in 2009, Chef Ken Myszka wanted to be part of a resilient local food system and started Epiphany Farms. They go beyond organic, using environmentally friendly farming techniques to provide nutrient dense food. By harnessing techniques such as permaculture and intensive pasture rotation, they help nurture a better understanding of food, health, and wellbeing.
