Fields of Gold, Sweet As Sunshine

| Illinois is the second largest producer of corn in the country, and this week we have some local sweet corn in from Pembroke Township, Illinois. It’s juicy, sweet, and tender. We found a perfect recipe to put it to good use (it’s also delicious on its own).
Some more sungold and cherry tomatoes from Brennemans Country Store (Sumner, IL) as well as yellow slicers, heirlooms, and roma tomatoes from Good Soil Farmers. Ever heard of Jimmy Nardello? He’s so rad he has a pepper named after him! We have some on our shelves from Sola Gratia Farm (Urbana, IL). Plus, local sweet potatoes from Millers Farm and local cantaloupe from Persimmon Ridge Farm. |

Y’all, we can’t stop eating this charred corn and quinoa salad. The sweet corn from BSRR Youth Center, plus some avocados, peppers, cotija cheese, quinoa, topped with cilantro and lime is a decadent and nutrient-packed summer meal. Serve with chips or on its own. Yum! |

| This month, our Round-Up at the Register partner is Devices for the Disabled, a nonprofit on Chicago’s south side that refurbishes used medical equipment that otherwise would end up in landfills. |
| When you Round Up at the Register this month, your funds directly support an organization providing free critical medical equipment to those who need it most: those without insurance, who are underinsured or lack the finances to purchase the equipment they desperately need. |
