Micro & Macrogreens

From teeny tiny and spicy to large and dense, we’ve got vegetables of all shapes and sizes this week! Italian eggplant (Bee Cool Honey Farm) and summer emerald eggplant (Epiphany Farms) pair well with red calabrian peppers (Gooseberry Acres) and padron peppers (Sola Gratia Farm) for a Mediterranean classic—see the weekly recipe below. Served with mixed cherry tomatoes (Persimmon Ridge Farm) and topped with spicy microgreens from Chicago-based greenhouse (Closed Loop Farms)? The perfect light summer dish.

Why microgreens? Harvested just after seed germination, microgreens are packed with more minerals than fully mature vegetables. And macrogreens? Well, we just wanted to show off this giant kohlrabi.
